Kitchen Backsplash

Hello everyone. I am helping my mother install a backsplash in her kitchen and I had a question. In areas like around the window thats above the sink should the tile extend to the ceiling? Or just to the top of the cabinet line? She also has a small breakfast bar with cabinets that is separated by a doorway. Should we tile around the door way connecting it to the other side of the kitchen?
