Closing today on my first house.

Im closing this afternoon on my first live in rehab. I have a few questions. So i know theres a few things I need to have done, like an electrician to come out and replace somethings, but going forward Im going to be doing the bathrooms, kitchen, floors throughout, hot water heater, pretty much the whole nine. I wanna organize everything myself with the contractors(i.e. not use a GC for the whole project) but in order to lets say get a whole bathroom done, who do I start with? Should I just call remodel companies and get quotes for the whole bathroom or do I need to schedule plumbers, then bath installers, then flooring guys etc?
