Flood Damaged Sub Floor

If a house has been flood damaged and all the sub floors need to be replaced, how would you do that. Mainly I am talking about the sub floor under the wall sill plates. Spot repairs are simple enough.

Spare me the "Hire a Contract" response please. I am looking for a technical answer.
