How can I double my money from 20k to 40k, in a short period of time, with real estate, without taking a ton of risk? I appreciate any tips or advice!

You can't. Risk and reward move together. There is no way to achieve a 100% return, in a short time, without some extremely high risk.

You can have good returns, quick returns, and safe returns, but you cannot have all 3 at the same time. In all honesty, with your attitude, you would be better off putting the money on red/black playing roulette.
