Turning Multi Unit Apt Building into Condos - Condo Conversion

I have been tossing around this idea for awhile now, and wanted to get other's opinions. I would also love to hear if anyone has done this, and how everything worked out.

I own some multi-unit properties. I was considering separating each unit into a condo on its own deed, and selling them off individually. I have not gone far with research yet, but just wanted a free for all below with ideas and opinions.
