Should it really be this hard for an investor to get a mortgage?

My wife is an eye doctor and I'm an attorney, but we are investors.  We are finding it very cumbersome trying to get a loan on a $675,000 house in Tennessee.  They keep asking off-the-wall questions about our investment properties.

Does anyone know a investor-friendly to lenders?

Our lender uses tax returns for properties we've owned for two years, lease agreements for properties that we've owned less than that and stated expected income for properties that are not yet occupied. Always have to provide a litany of documentation but if they are asking for your documents one at a time over weeks that is pushing back your closing; my guess is they are just overwhelmed with volume and aren't paying enough attention to your file to ask for more than one thing at a time.
