Anyone have experience in helping to fund a restaurant/food truck?

This likely will sound strange, but here it goes...

I recently came across a small shop in PA selling what I thought was the best Hot Dog I have ever tasted.

The shop was a small operation (just 2 locations). I think they have a great product and in a short discussion with the owner, he was open to hearing ideas about capital investment or expansion.

Has anyone ever made a silent investment in a restaurant and if so how did you structure the investment?

On the other hand, I live in NYC in which Hot Dogs and food carts/food trucks are a big part of life. Has anyone had any experience in starting a small food service operation? I do not intend to operate it myself so wonder if it would be worth the hassle and cost for such a low margin product. Also have no idea where I could find someone to operate the venture.
