Credit Card Payment Question

Hi everyone, I have a vacation unit in Cabo that I am considering to rent out myself. I have a few questions perhaps you veterans can help me with. First is if the renter wants to pay by credit card via my website, which company offers the best rate and service? Second question is whether security deposit should also be charged on credit card or is it better to request a check? Lastly, if the transaction goes through with airbnb or vrbo, do they charge all the rentals including putting a security deposit on hold and then issue you the money AFTER the renter checks out?  Sorry for asking so many questions. Any help will be greatly appreciated!
