Househacking with two roommates & a kitchen remodel

I currently househack and have two roommates. We all share the living spaces like the living room, kitchen, and two bathrooms. There has been a lot of crazy weather over the last few weeks and constant freezing temps have created ice dams around almost all of my gutters. Long story short, this has caused a leak through my roof, attic, kitchen ceiling and cabinetry, and damage to my microwave and stove. The only way to get to the leak and fix it, is by tearing out all of my kitchen cabinets tomorrow and then remodeling the entire kitchen... luckily, all of this damage is looking like it will be covered by insurance. The problem I'm going to have is that myself and two roommates won't have a usable kitchen for the forseeable future. I'm not worried about myself, but I need help coming up with ideas on how to make this fair to my roommates. Do I give them a discount on rent for the months that the rehab is occurring, since they won't be able to utilize the kitchen? Or do I keep rent the same and give them a separate stipend for food since they will have to eat out more? It's my first househack/rental and first time dealing with a renovation as big as this, so any and all advice is appreciated!
