What sort of contract or waiver do you make contractors sign?

I'm about to hire a drywaller for a fairly small job. It involves drywalling some ceiling that's somewhat tall for a residential place.

The place I'm having repaired is where I live, and the house and insurance are in my name. Standard homeowner's insurance.

What kind of contract or liability waiver should I get the contractor to sign?

I've never had people who've worked on my house before sign forms, but I've gotten the previous contractors through friends or friends of friends. This guy is from Craigslist.
