need advice for LLC

I'am closing on my 3rd Multi Family property in a couple weeks. While at the lawyers office for the closing I was planning on opening an LLC for my properties to add some protection to my personal assets. It seems like I can either put all 3 properties under 1 LLC or I can make an LLC for each individual property. What are the Pros and Cons of each? Has anyone skipped the lawyer and done it themselves? If so how hard is it? Thanks in advance this site and podcast has helped me out alot!

Also wanted to add that I do currently have a 2 Million dollar umbrella policy.
