HELP! Need tenant advice ASAP

We have just taken on our first house-hacking experience and are just over 5 months in. We were very blessed to have our first 3 tenants who live downstairs be people from our church and people we know. They signed on for six months and lease ends end of April. We have one tenant who has expressed interest in staying on another 6 months, still necessitating that we find a couple new renters. We've put ads out and had one individual show some interest. He and two friends are interested but are currently laid off from their restaurant jobs. He explained that they have money from savings and can make a security deposit. They were interested in signing on for one year. Just being honest: COVID-19 circumstances (potential tenants being laid off) and having a previous tenant wanting to stay on complicates things. Please advise!
