About required loan document

One of my local banks says they only needs the past two years tax return for loan application documents. Is it even possible? Since I am going to be out of my Job in the May of 2020, I am really thinking of taking full advantage of this if it is true.

Which means I can borrow say in December of 2020 if I see a deal in the market.
