Tenant evicted, owes over 3k and stole oven appliance help!

Hi! So we just evicted a tenant and we found out she stole the entire oven out of the appt. She owes us around 3k on top of that. I was told if we sued her then on every paycheck she receives we will receive a portion of that until we are paid off. Is this true? Does anyone have any experience or opinions on what to do? Thank you!
