Security Deposit Changes

I recently had a tenant who I wanted to move out about 2 weeks prior to the lease termination date.  To do this I would take the apartment as-is and would only be checking the apartment for cleanliness.  She would move out if I gave her the entire security deposit minus any cleaning fees upon her returning the keys.  I gave her the security deposit in full.  Upon further inspection I found the apartment to not be clean at all.  Surfaces were not wiped and there was cat hair everywhere (no pets were allowed.)  I want to deduct from her security deposit, but how can I do this being I already gave it back to her?  I did not send her a closing statement yet.  Is that something I can include in that statement is an itemized deduction list?

@Anna Reamey  Don't know how much money is involved but beyond contacting the tenant and asking, I'd probably chalk it up as a lesson learned.  For me, it wouldn't be worth the stress factor to go beyond that.  Google search is your friend when looking for information.
