How to screen tenant from abroad & how much security deposit?

Hello BP Community!

My spouse & I have 1 LTR with a property manager, all 4 other unit we self manage as furnished MTR. We usually lease our home for 1-3 mos only. We have a new applicant right now and this is for a Class B property. The applicant (with wife, 2 small kids & a cat) want to lease our furnished home for 1 year. It is a single family home. How much security deposit do we ask for? 

Also, this applicant is coming from abroad. He is a doctor on a visa for practice or education (if I am not mistaken). How do I screen him since he does not have a US number yet or SSN ( also not sure if he will have it).

The documents he sent me are his passport, his US Visa and his contact. He will be having the residency to the hospital where I used to work.

This property is in Orlando FL. We are currently in WA for work…
