record keeping for taxes if contractor walked away?

Hi all, what is the best record keeping process if a contractor walked away from a job and stopped returning calls and ghosted? This happened to me two years ago but I'd still like to keep clear records of the expenses paid for the property. It's not worth my time going to court but it was about ~20-30K of fees taken and work that needed to be completed by someone else. The contractor is working under a different LLC name, he walked away from maybe 1-2 other projects from other people so it would not be hard to find him.
