Change of name and address on deeds and elsewhere

As an owner of investment properties in several states I would like to get some degree of privacy and not to have my details available in so many places. Also websites listing my name and home address with a list of properties I own publicly for anyone to see seem as a source of potential problems.

First I should say, I do not want to put my properties under LLC.

In terms of address:

Searching on BP I found that I may be able to change mailing address with tax assessor to some other address than my home such as PO box. However, would this change the address associated with the deed as well? If not, how can this be changed?

In terms of name:

Is there some option such as lawyer or agent to replace my name (and thus address as well) on deeds and other documents? How would this work with ownership rights, taxes, and liability?
