Getting A loan without proof of income history

I'm looking to purchase my first investment property now that I have saved a sufficient amount of cash, however I've hit a roadblock when it comes to financing. I cannot prove income for previous years because up until this past november I had been paid in cash. I've had the same job for five years now and it's the only job I've ever had. This past summer I was working with a lender from quicken loans and I told him my weekly and annual income without proving anything and he gave me an estimate of buying power that I was pleased with, however I never uploaded any documents that he wanted to see (w-2 and pay stubs). I can provide pay stubs with the same amount I told him I was making last summer but my last W-2 shows that I only made a few thousand dollars because I was only on the payroll for about 2 months and my W-2 will not match what I told him my annual income was or even really come close. Are there any other options for me to get a mortgage? how can I explain this to a lendor? and what are things I should and should not say when trying to explain this to a lendor?

You can file amended tax returns for the last 5 years you were paid in cash , pay the taxes and penalties , then if you have any money left you may get a loan .
