Setting up escrow after closing?

We had our cash out refi documents set up to be signed today. Noticed they did not have the escrow/impound account included in the monthly payment. Which it should as we previously discussed.. called the lender and he said it was no big deal to set it up after. I’m not super familiar with loans so wanted to see if that is indeed very easy to set up? Only concerned because he said we had to sign to get everything pushed through. Doesn’t seem right to sign something isn’t correct.
