Self employed- Getting approved for mortgage

Me and my Fiancé are both self employed. We make decent money, but My banker wants me to wait for 2 more years until he will help us out with getting approved.

Are there any tips, tricks to speed this along? Or are there any bankers on here that can help us out? We have quite a bit of cash flow on a regular basis. I am not on my payroll yet which I’m going to do here shortly.
