What's the best way to go about mortgage notes?

I have been learning all that I can, and I am in love with the idea of mortgage note investing. I have been trying to figure out the best way for asset protection and limiting taxes if I were to invest in notes, but most of the content I find is just describing how to invest and nothing to say about taxes. The only exception I have found so far is using a sd Roth IRA for growth to be tax free, but I am no where near 60 yet. Is there not a way of minimizing taxes if I were to invest now for now not for later.
