New job in new town, what will the bank need for new mortgage

hey everyone, looking to find out what to do to be able to obtain a mortgage for owner occupied. I'm changing jobs, moving and want to buy a house. Clearly I won't have a check for a couple of weeks but I also do want to wait 2 years in an apartment to show the job is stable. What would a bank typically ask for to be able to get a mortgage in this situation?
