Looking for advice with having previous owner manage property

So I am completely new to real estate investing and about to purchase my first vacation home (in TN). The sale closes in six weeks and the current owner is currently managing the property themselves across four different websites (like airbnb).

The owner is willing to continue managing them for me for a fee and I will most likely take them up on their offer. Has anyone been in a similar position before or could possibly give me advice for any logistical things? For example, should I hire a lawyer to draw up a property management contract? Am I going to have to give my ssn to the owner (property manager)? Should, I get an ein instead? Is there anything I should be wary about and does anyone have any suggestions or recommendations? All advice would be very much appreciated.
