Tips for working with a GC on a new build

I am building a house in summit county on almost an acre, so in addition to the home being built we will need to excavate and all the other details to get the foundation in, septic, driveway, retaining wall, etc. Land is purchased and we are in the bidding process with GC's. Are bidding fees common with for new builds? Any tips on working with GC's in summit county?  Should I have a lawyer review our contracts?  Any tips and advice welcome.  We have only flipped and have rentals where we used GC's and projects were much lighter than this.  This project is way bigger and we want to get it right. Thanks
