Where can I find official documents regarding "Subject To"? I would appreciate it if you could provide direct links to official websites as references. Thank you

Sub to is unofficial by definition, so there's not a boilerplate, legal way to do it. I'd suggest you reach out to a local, investor friendly title company. If you find the right title officer, they can walk you through the process, escrow and proper documentation.
I didn't mean to imply that it's illegal, just not a clean or "typical" transactions. Becuase of that, it can be hard to find professionals to help becasue it's much easier for a title company or real estate agent to do more straightforward deals that pay better.
There are several title companies in my market that have stopped doing these altogether because they're typically more complicated, the parties are more needy and inexperienced and the pay isn't typically as good.
Anyhow- I'd get out to some investor meetings and ask around and see if you can find others doing these deals and learn all about the process. They're certainly is a risk/reward balance to sub to, make sure you understand the process from start to finish.
