LLC Pending - Can I have someone write a check to the LLC name?

I'm in the process of establishing an LLC but waiting for the final paperwork. I'll still need to get an EIN [as I understand it] to open a bank account. Can someone write a check to the LLC name, even though it's not finalized? And then I'll deposit the check when everything is done? I wouldn't need to deposit the check immediately, so if I had to wait a month or so, I don't much care.

Also, how long does it take to get an EIN?  Thanks!
