Best contractor pay arrangements to create a win-win flip team

I am getting set up to buy a flip deal that I would like to turn into many more to follow! 

How have you set up pay and incentives with your go-to contractors so that they are incentivized to continue working on your projects and get them done timely and well? 

Are there situations where it may be better to pay them in-house under your LLC or S-Corp?
