I've been trying to get a list of absentee owners, eviction records, and probates here in San Antonio.. I've been to the courthouse downtown and tax assessor on the west side but keep getting the run around.. still haven't found what I'm looking for.. any advice helps, thanks.

For absentee owners, you can use Listsource or one of the many marketing companies. Eviction records I believe you can get from the individual precincts(JP court) where the evictions take place. The eviction records contain the phone number of owners. You could cold call the owners. Probates can be had by going to the probate department in the courthouse. Ask for the last month of files or whatever month that you want. Lots of leg work that you need to do for those.
