Terminating Utilities

Today is Monday 14. We are to go to the title co on the 21st to sign papers, and the agent said we will try to close on the 23rd.

What date should I have the utilities stopped? I would like to give the buyers the opportunity to do a walkthrough before that, but is it necessary?
Should I tell them that the water/electric/gas will be off on a particular date?
Do the utilities have a transfer policy, rather than just a stop then start policy?
