Can I Pay with Cash and Then Get a Mortgage?

Does it ever make sense to offer with cash and then after closing get a mortgage? How hard is it to do and what are some things to consider?

I lost out on my first offer a few weeks ago and I think the fact that I couldn't move fast enough and was going the conventional route might have played a role. I believe the accepted offer was in cash.
