How are Blog Categories Determined?

How are blog categories determined? I posted my first blog entry and the category is: Blogs » Mobile Home Investor » California » San Francisco » John Vashon. Also, from my blog page, to the right, under my name it says "Mobile Home Investor." In both cases, these should be "Mobile Home Park Investor." Thanks! jv
