Responding to multiple offers

I am listing a SFR in a desirable Neighborhood in Orange County, CA it's priced fair and there is literally nothing else for sale. We are expecting multiple offers. Is it unreasonable for me to state that I will not be responding to any offers for 7 days? I'm just trying to get to dollar obviously.

You just set a structure from the start. We put it on the market on a WED and declare highest and best offers due on TUE by 5 pm. This way, everyone is on the same page. If people want to submit early, we say we are not reviewing until TUE at 5 pm. Sometimes buyers whine about how good their early offer is and it is rarely as good as they think.
