Structuring Rental Properties and PM

I have a few properties that I manage. After some research on the forums it seems I should set up an LLC for the management company that has its own business bank account. The properties I have were purchased in my name. I'd like to transfer each rental into it's own LLC and possibly create a holding company. For example....

ABC Holding Company (LLC?) 

Collects payment, moves money, and acquires new properties. Owns below properties.

Rental #1 - 123 Main St (LLC)

Pays mortgage, PM company, expenses, etc

Rental #2 - 456 Main St (LLC)

Pays mortgage, PM company, expenses, etc

PM Company (LLC)

Manages properties for ABC Holding Company

I also have an umbrella policy in my own name. I'm assuming once this structure is set up I'd have a policy for each property or just the holding company? I'm assuming the PM company would need a separate policy as well.

The question is how to move the properties into an LLC. This forum seems to have various opinions on this. I'm looking for a real estate attorney who specializes in setting up this structure and transferring properties into LLCs for me. Please send me a PM for any recommendations. I'd like to get this set up professionally so it's completed correctly and another item is off the todo list.

I came across this series of videos that uses land trusts to transfer properties and out of state LLCs to help protect ones identity. Has anyone done something like this?
