Smooth or textured walls? New homeowner...

Hi!!

My fiance and I just bought a house in Arizona.  We knew we would have to do a few fixes to it, but didn't realize HOW MUCH... (newbies!).  The previous owners did some really BAD patchwork in many places.  For example, there is a really uneven wall that shows the outline of what used to be a door frame right in the middle of it (we are guessing it was a door to the bathroom that they decided to move).  Whoever did the work did a really crappy job so it stands out in the middle of the hallway, even with textured walls.  The texture itself was a crappy job as well.  In other places they fixed spots on the wall, and then painted smooth over them but never tried to match the texture, so on the same wall we have smooth over texture.  There are many more examples... so one of the first things we want to do is remove popcorn ceiling that is in 3 of the rooms and paint everything inside, we had someone come give us a quote and he asked what texture we wanted on the walls/ceilings, which I hadn't even thought was an option!  My fiance and I really like smooth, but we were advised that no matter what a great job the painter/contractor does, those imperfections will show.  He also advised us that to repair the wall with the covered up door frame it would require removing the sheet rock and pretty much taking everything down and building that wall back up, because sanding it down wouldn't do the trick.  Which would be a whole other added expense.  I've seen some posts here and what people recommend is mostly personal preference but from anyone's personal experience or professional opinion would those imperfections look worse if we went with smooth walls?
