Rental Property owned outright

Hello, 

Recently signed up on this site and have been learning quite a bit by reading some of the posts. The question I have is regarding a rental property we owned in another state. We recently paid off one of the rental properties and I want to know how do we protect this rental property and the rest of our assets in case we get sued, etc...? How much insurance to cover liabilities? We also owned a second home that is a rental as well plus the house we reside in. Any ideas/suggestions will be great since we are so new to all of this. Thanks.
