LLC and bank accounts

Hello! I'm a real estate agent and an attorney (not practicing). My brother-in-law is a licensed contractor. We are ready to start investing and need some advice on starting an LLC and bank accounts. I know some investors have one LLC that they use to buy their properties, and others have multiple LLCs. Not sure what advantages come with each method and told appreciate any input. We are in New Jersey. Thanks!
