Trying to understand how to close with a land trust as a first time home buyer

My first investment property happens to be my first home purchase, so my questions are hopefully basic for anyone experienced here. For context, I'm in a state with land trust statutes.

- If I pay property taxes online (let's say with a credit card), will my name show up as the payor or will the trust/trustee's? 

- For people who use LLCs/trusts, is it more common to have property insurance with the name of the LLC/trust? Does it make a difference for privacy (in terms of public records, so disregarding lawsuits)?

- I should not be signing anything regarding title or mortgage documents if I use a land trust. Is that correct? My goal here is to of course keep my name out of any public records regarding this property.
