What do y’all think of metal roofs? Pros and cons? Anything specific I should look out for?

Metal roofs can be a good long-lasting option. Your inspector should pay close attention to how the metal is fastened to the rafters. As the sun hits the metal, it will expand, then contract when it gets cold. This can cause the fasteners to become loose and then water can get in if not done properly.
