Multiple deals with multiple investors

I am playing around with some ideas on how to structure multiple deals with multiple investors. As opposed to "assigning" each investor a deal, if everyone was equal in multiple deals this would insulate them from an unforeseen lower return. And with new investors coming in, ease of transferring ownership is key. I assume an llc would be best with this all spelled out in the articles.
