Which livestock species are best suited for ranches engaged in direct participation programs?

I have yet to go over there since the old woman died but I plan on going today after work. 

I live outside Atlanta and have plans to expand our other business to Tennessee (chattanooga, nashville, knoxville triangle) and Texas (austin/dallas/tyler area).
