Any other ways to allow tenant to conveniently make a guaranteed funds money transfer for a FIXED amount that the LL sets and NO LESS, AND before a certain date and NO LATER?? 

If your transfer ownership of the other LLC to the WY LLC, I think you may lose some to all of your anonymity.

Deliver a Notice to Quit for Non-Payment of Rent to their door (tape it to the actual door in a sealed envelope with their name on it.

Just because it transfers without a warranty deed, doesnt mean that it is a doomed asset for life. 

I have an LLC set up and my question is twofold. 1) I understand putting this property into the LLC could trigger the due on sale clause, but my mortgage says it will allow "under certain circumstances" the transfer to another person.

But with more and more states and localities adding transfer taxes or grantor's taxes along with other fees involved, the costs to sell a home these days are huge, and the pressure on sellers' bottom lines will cause something to give somewhere, the weakest link likely being agent fees or involvement.
