For tax matters you should run by your accountant and any second note created should be done by a competent real estate attorney.

I would contact your real estate agent and attorney as soon as you can, they’ll have to change the dates on the contract and then have you sign with the dates you want.

When you serve any notices you include the tenants name and also "and all others" this is what my attorney has done to make sure we cover all people living there. 2.
