Be sure to receive a copy of their Certificate of Insurance naming you as a Certificate Holder (so that you at least have some measure that the policy is in good standing at the time you request it).Depending on your state's (or governing municipality) requirements, if part of the licensing process include a background check on the applicant, then you may have some measure of having had them pre-screened by the municipality...
