The left owns both City Councils and Mayors offices here in the Twin Cities.  

Regarding the legalities of if STR's are allowed in the municipality you would be need to check with the local codes office to confirm.  

Especially with an uncooperative escrow officer.  

In the past I've always been able to head over the JAG office (they're the military legal folks) and get a POA pretty quickly.

And I would contact the county inspections office to let them know what happened.

Make sure the escrow officer knows what's up, that moving forward 2 entities will be requesting various paperwork from them, and why (that escrow officer has an incentive for it to close, too!).

Apparently I lucked out and three blocks away they're going to start a big development project that includes a ton of retail, office, and residential spaces.

I could be wrong.Anyways, I tried calling the branch office that it is addressed to on the records and once speaking to the manager… she said all that she can do it tell me to contact a real estate agent.

Our residence of course would be partially used as an office to answer calls, arrange business transactions etc.   

Not certain that remote work will last into the future for all jobs, employer will need to write a letter saying that status continues for 36 months as many employers have required employees to return to office/lab/...
