Living in Houston I would go over about sunrise and start nailing until it got pretty warm, then I'd head to the office.

for me in Denver it sounds like a warm breezy problem.

If you are in a warm-enough, low snow, climate and do not require ventilation, then you could fasten your plywood directly on-top of the rigid insulation.We've used this same approach in retrofitting existing roofs and with complete tear-offs (moving from a flat roof to a sloped roof).
