If you stay on the weekends because you are away Mon - Fri, there shouldn't be an issue.Please note, depending on the location, property type, and seller's situation (i.e. their motivation & desired closing date) 203K loans can be difficult to get accepted. 

If there is a due-on-sale clause; you can just quitclaim them anyway and hope there is no issue or get written acceptance/agreement of the quitclaim from your lender (most likely never going to happen).

I'm not an accounting expert but I've noticed that, sometimes, there are a few different ways to book things that are acceptable.
