I would like to think that I could be valuable in house to companies that are redefining spaces where I could assess the mechanical needs for the reconfigured space(s).

It will be incredibly useful to have the knowledge you are learning right now, as you will be able to apply it to your flips, and ensure your contractor(s) aren't peeing on your back and telling you it is raining.

I have a few questions about setting up an LLC or S-Corp for my business and would like advice on how to structure it properly.
