I have a friend that was a Superhost on AirBnB, managing only 3 to 4 properties for an out of town owner, and there were often times where she was driving from Asheville to Swananoa and Blk Mtn to clean properties when her cleaning staff - hired by her, trained by her - failed to show up.

If you were in a SFR that would be one thing, but as @Jim K. states - you do not have a right to record others without their permission and I gather that is the source of the pushback here.I fail to see how a Ring doorbell would restrict the peaceful enjoyment of the unit or violate the right to privacy of the other tenant.

I realize a lot of excited new RE investors first go out and get licensed but what they fail to realize is that In TX, as far as the state is concerned, you are now considered a RE expert when you deal with the public and you can no longer be a simple member of the public/investor.
