I think what @Alexander Felice pointing out that construction almost always goes over budget and runs longer (which extends your hold costs). 

There were couple of big settlement cracks that extended from exterior of the house to the interior under crawl space.

I picked up an old 2005 dodge Dakota extended cab for about $6k.

Please correct me if i missed anything.My question therefore is, with a good tenant, minimal maintenance etc would you guys strive to pay off the mortgage quicker i.e. 15-yr fixed mortgage (Option A), OR opt for a higher monthly cashflow by extending the loan overtime i.e 30-yr fixed rate.

If I were doing several month stays like you were, I would have an agreement for up to 30 days and if they were reasonable, I would then extend them. 30 days of short term rental and they do not have any tenancy rights you can basically just put them out.

I recently purchased a home using conventional financing, but frequently spend extended periods of time out of town for work.

And if you really are out of money, then you over extended yourself and should learn that lesson moving forward. 

My family and I were asked to if we'd like to move in to a old country house on 3 acres owned by my wife's extended family.

The last transaction 80% down small mortgage(820 fico) the new home national builder's own bank took 7 weeks and still forgot to wire funds after funding it expired had to be extended.
